How to make a Potato Latkes

 RECIPE 

 shredded potato                                                                           3 cups

grated onion                                                                                  1/4 cup 

beaten eggs,                                                                                   

saltine crackers, or as needed, crushed                                  

salt                                                                                                   1 teaspoon 

ground black pepper                                                                   1/4 teaspoon 

vegetable oil, or as needed                                                         1/2 cup 

LET’S GET COOKING

Add onion,eggs, potato, salt, crackers, and pepper together in a large bowl.

Pour enough vegetable oil into skillet to fill about 1/2  inch deep heat over medium high heat.

Drop spoonfuls of  potato mixture first pressing potato mixture against the side of the bowl to remove excess liquid into the hot oil slightly flatten the latkes into the oil with back of your spoon evenly thick.

Cook hot oil until browned crisp 4 to 6 minutes per side Drain latkes on plate lined with paper towel.
