Roast cod with a lemon, garlic and parsley crust

The delicious flavor of cod is amazingly paired with lemon juice, parsley & garlic in this simple dish.

Ingredients

675g or 1lb 8oz cod filled with 3cm/1¼ thick
3 tablespoon parsley chopped
pepper salt according to taste 
85g over 3 oz white bread crumbs
soft/slightly stale
two cloves garlic must be crushed
sixty gram/2¼oz butter must be melted
grated zest half lemon
squeezed lemon juice
lemon wedges for serve

Method of Roast cod with a lemon, garlic and parsley crust

Season the cod with salt and pepper to taste. 

Blend the breadcrumbs with the parsley, garlic, lemon get-up-and-go, salt and pepper, at that point include spread and lemon juice. Blend completely with your fingers. 


Place the cod in a shallow, ovenproof dish and press the buttered scraps solidly onto the cod to frame an even covering. Prepare at 220C/425F/Gas 7 for 20-25 minutes until the point that the outside is seared and the fish simply cooked through. Serve quickly.
