My sister and I often cook together. She’s older, and so her cooking skills are a lot more advanced than mine. So, I had a lot of fun proving to her today that I have a trick or two up my sleeve. Read on to see how I impressed my sister and her family with this delicious and authentic mutton karahi recipe, done shinwari style! Firstly, we’ll start by putting the mutton pieces in a pressure cooker to cook them through. If cooking in a regular pot, the process will take a total of 2 hours. With a pressure cook, the initial cooking is done in 15 minutes only. Then, add 200g butter to the mutton. You don’t need salt because the butter we are using is salted. Also add 1 teaspoon of ginger and garlic paste. Finally, add water and put the lid back on. Let it simmer on medium heat for 12-15 minutes. Now take an Indian wok (karahi), and add butter to high heat. Also add the lamb fat and cook it with 1.5 teaspoon garlic and ginger paste. Here, we’ll cook it for 3-4 minutes or until the fat is cooked through. Next, add all the mutton stock from the cooker to the fat and let it simmer for 2 minutes. Then add the mutton to the wok. Add tomatoes and chopped peppers to the mutton and cover the lid after mixing the ingredients. Cook it on medium heat for 10-12 minutes. Add all spices to the mutton and mix well. Once again, cover the wok with a lid and let it simmer on medium heat. Then take the cover off and keep mixing the karahi till all juices and flavors are incorporated.
